Chocolate Cheesecake

Hello, I'm back in the kitchen. :)

I have got the recipe from a book I bought a few years ago on the French Atlantic Coast.

Ingredients:
250g chocolate nut biscuits
150g butter, melted
2 table spoons brown sugar
500g cottage cheese, softened
300ml thickened cream, whipped
50g milk eating chocolate
3 teaspoons gelatine
2 tablespoons water
110g caster sugar
3x60g chopped Mars bar

Directions:
- Line base and sides springform tin with baking paper.
- Process biscuits until fine. Add melted butter, process until combined.
Press mixture over base and sides tin. Refrigerate 30 min.
- Make filling by sprinkling gelatine over the water in small heatproof jug, stand jug in small saucepan of simmering water. Stir until gelatine dissolves. Cool 5 min.
Beat cheese and sugar until smooth. Stir in gelatine mixture. Fold in chopped Mars and whipped cream.
- Make hot chocolate sauce. Combine chocolate and 2 tablespoons cream. Stir over low heat until smooth.
- Make hot caramel sauce. Combine caster sugar, 20g melted butter and 2 tablespoons cream. Stir over low heat until smooth.
Spread half filling over crust. Cover with caramel sauce. And cover again with chocolate sauce.
Spread the remaining filling. Cover with caramel sauce, next with chocolate sauce.
Cover with foil. Freeze overnight.
